Vada Pav Bites

Introduction:

Ingredients:

• 1 cup boiled and mashed potatoes
• 1 tablespoon oil
• 1 teaspoon mustard seeds
• 1 teaspoon cumin seeds
• A pinch of asafoetida (hinge)
• 1/2 cup finely chopped onions
• 1/2 cup chopped coriander leaves
• Green chilies (finely chopped)
• Salt to taste

For the batter:
•1 cup besan
•½ cup semolina (suji)
•1/5 cup rice flour
•1 teaspoon turmeric powder
•½ tbsp Surabhi Ginger
•Garlic Paste
•Salt to taste
•Water (as needed to make thick batter)
•Oil for deep frying
•Breads Slices – cut into bite-sized pieces
•Surabhi’s Date Tamarind Chutney for serving

How to make:

Prepare the vada pav filling:
1. Heat oil in a pan, add mustard seeds, cumin seeds.
2. Add chopped onions and sauté until it turns golden brown.
3. Add mashed potatoes, chopped coriander, green chillies, and salt. Mix it well.
4. Allow the mixture to cool and shape it in to small rounds.

Make the Batter:
1. In a bowl, mix besan, semolina, rice flour, red chilli powder, turmeric powder, and salt.
2. Gradually add water and whisk until you get a thick, smooth batter.

Assemble Vada Pav Bites:
1. Dip each vada in the batter, ensuring it’s well coated.
2. Heat oil in a pan for deep frying
3. Fry the coated vadas until golden brown and crisp
4. Drain excess oil on a paper towel

Serve:
1. Place fried vada on each mini pav bite.
2. Serve with Surabhi’s Tamarind Chutney & Surabhi Tomato Ketchup
